Join Flights for a Southern Take on Traditional Mexican Fare

Enjoying the warm weather? I know I am! When it's above 90 degrees outside, all I want to do is eat guacamole and enjoy margaritas by the pool. Summer is so close, I can almost taste it.
Celebrate the hotter temperatures with Flights @ The Renaissance at its upcoming "La Vida Comida" dinner on June 19. Chef Dean Thompson and his team will put their Southern spin on traditional Mexican fare, a great way to kick off the summer season.
The dinner will begin with pork cheek pozole, a broth-rich soup including white hominy, chiles and tomato. Chilaquiles will be served as the second course, a traditional Mexican dish of fried tortillas, which will be topped with chipotle chicken, pico de gallo, farmers cheese and egg. Wash these first two dishes down with a tepache reposado, a sweeter drink typically sold by street vendors in Mexico.
Course three will include a smoked duck tamale with mole rojo, cabbage and radish. Of course, Modelo Negro makes an appearance at the "La Vida Comida" dinner. Negra Modelo is brewed and bottled by Mexico's largest brewery. The beer's sweeter notes are known to balance the savory and sometimes hot Mexican cuisine.
A refreshing dish of scallop and octopus ceviche will be served next with corn tortillas, salsa verde, lime, cilantro and onion. Ceviche is a popular dish served on the beaches of Mexico. This course will be paired with a delicious chili mango fizz, which will certainly make you wish you were sitting by the ocean with your toes in the sand.
A crowd favorite of carne asada with poblano, walnut cream, pomegranate and fried plantains will be served as course five. Chef Dean plans to serve a tecate clamato with shrimp, which is typically a light, refreshing beverage with intense flavor from a mixture of tomatoes and other spices.
Finally, dessert! Pastel de tres leches is a popular Mexican dessert consisting of sponge cake soaked in a mixture of three kinds of milk. The chefs will also include Mexican chocolate and dulce de leche gelato with the cake. Dessert will be served with a patron café horchata, a drink made with rice and cinnamon.
