Located in Raleigh, Sweet Stacey Cakes creates custom cakes for any special occasion. Stacey has over three decades of cake decorating experience. Stacey fell in love with cake decorating when she was a teenager, making “creative” cakes for her friends and family. When she began having children, she branched out into creating fancier cakes with her homemade buttercream icing. Stacey enjoys challenging herself and has expanded her cake endeavor to include fondant, gumpaste, chocolate and sugar.

One thing I love about Stacey is her charming and sweet personality. Honestly, you can’t have a sparkling pink cupcake truck without a personality to match. In 2012, Stacey added “Smiles” the mobile food truck to her business. From full time IT/Software/Web Project Manager, she’s now known as the smiling cupcake lady. She enjoys delivering cupcakes throughout the Research Triangle area to regular existing destinations, events, companies, private parties and new spots.

IMG_1400Stacey is one of the most creative people I know. She loves to think outside the box, which you can see in her numerous creations. She also takes cake inspiration from anywhere, including one of my tweets about drinking a Cheerwine! Not only is she a creative thinker, but she listens to her customers. Stacey regularly visits an office park and a few of her customers began requesting key lime cupcakes. Voilà! Next time she arrived, she came equipped with the beautifully garnished, lime green cupcakes.

IMG_1882I’m a huge fan of the PNut Butter Baby and Sexy Mexican cupcakes. The PNut Butter Baby is a rich, moist chocolate cake with chocolate buttercream icing. You’re in for quite a treat when you reach the gooey peanut butter filling, and I always save my topping, a Reese’s peanut butter cup, for last. The Sexy Mexican is often a crowd favorite. Chocolate cake is filled with a spicy, Mexican chocolate fudge and topped with chocolate buttercream and spiced nuts.

IMG_1773The Vanilla Chai Latte cupcake is delicious and light. Moist vanilla chai cake is topped with classic buttercream icing, then lightly dusted with cinnamon and nutmeg.
